I'm figuring I could use Oat Matza Meal, Quinoa Flour and Potato Starch and get a pretty good product out of it. Was just looking for other ideas.

I would avoid oat matzo meal for pancakes, as it's too heavy. I would try about 25% quinoa flour to 75% potato starch and include either kosher l'pesach baking powder or whip the egg whites separately until they're stiff to help the pancakes be fluffy. Let me know how it turns out!
