My mission for the rest of the month of October:
-To make a gluten-free potato knish (difficult)
-To make gluten-free kasha varnishkes (easy)
These are the two Jewish dishes I miss the most, so today I'm making a public commitment to create at least a Version 1 Beta of each by the end of the month. You have my permission to scold me if I do not accomplish these projects by month's end.

ReplyDeleteMy grandmother used a pastry-like dough for her knish. She'd just add ice water and oil (to keep it parve) little by little to the flour until it was the right consistency and then refrigerate before rolling out.
