These stick together less well than any other latke recipe I make, because the veggies don't produce any of their own starches. So I'd bet you need to add a lot of tapioca starch and potato starch (and maybe skip the regular all-purpose GF flour) and maybe some egg-replacer to keep them together. Even if they fall apart, they're totally yummy, though!ByTheBayhttps://www.blogger.com/profile/06670549761665347741noreply@blogger.comtag:blogger.com,1999:blog-35701713.post-83721423137920316812008-12-22T08:51:00.000-05:002008-12-22T08:51:00.000-05:00The color in these latkes is so appealing. The problem with zucchini is they give off more liquid, which may make the latkes have trouble staying together. In this case, try adding more egg and flour.ByTheBayhttps://www.blogger.com/profile/06670549761665347741noreply@blogger.comtag:blogger.com,1999:blog-35701713.post-6138673893885230282007-01-19T11:07:00.000-05:002007-01-19T11:07:00.000-05:00Do you think you could sub zucchini for the parsni...Do you think you could sub zucchini for the parsnips?Anonymousnoreply@blogger.comtag:blogger.com,1999:blog-35701713.post-69560990590929537502006-12-20T00:36:00.000-05:002006-12-20T00:36:00.000-05:00gorgeous. i want them. now.
