But I think I just took a very ripe plantain, mashed or pureed it well, and added it to pancake mix (made with a little less liquid than usual), then cooked them up - You have to fry on pretty low heat or they'll burn, if I remember right. I think this photo is of pancakes I made from scratch but I'm sure you can do this with pancake mix.
