(I later sent you a message about noodle kugels using the potato noodles that only seem to be available around Passover.) I've kept kosher my whole life, been gluten-free for 8 years, and been vegetarian for about 10 months now. I live in New Jersey, and I'm married, with one stepdaughter in college, and one small and very lively stepdog. Here's something my mom used to make, which I am trying to figure out how to recreate. I think she called them kartoffel knaidlach. She made some kind of mashed potato concoction that she rolled into long ropes. Then she cut the ropes into 1-inch pieces, boiled them, and then fried them with onions. I can't find a recipe for this. I substituted chard for kale (kale and I don't get along) and left out the olives (same reason) and it turned out fabulous! It was my first experience with polenta (my mom always tried to get me to eat it growing up, but the bouncy tube of it from the grocery store creeped me out), and now I'm excited to try many more polenta recipes.
